Collagen is a major sstructural protien. About 25% of everyones body is collagen. Collagen supports the skin and internal organs. Bones and teeth are made up of mineral collagen. College from live stock is a familiar ingredient for cooking. College like most protien, when heated loses all of its structure. When the heat gets into it the triple helix unwinds and the chains separte. Then it cools down and will take in all of the water like a sponge, forming gelatin
