Collagen is a major sstructural protien. About 25% of everyones body is collagen. Collagen supports the skin and internal organs. Bones and teeth are made up of mineral collagen. It also is a molecular protien that can form cables that strengthen the tendons and vast, resilient sheets that support the skin and internal organs.Collagen is a provider to structure to our bodies, by protecting and supporting the softer tissues and connecting them with the skeleton. College is made up of three tight chains put together to make a triple helix. Each chian is made from about 1400 amion acids. The third amino acid is glycine, which is a small amion acid that fits perfectly into the helix. The other two are made from an unexpected oreder of Hydorxyproline, a modified version of Proline and Proline which is uncommon. These amion acids repeated sequence form a sturdy structure.

College from live stock is a familiar ingredient for cooking. College like most protien, when heated loses all of its structure. When the heat gets into it the triple helix unwinds and the chains separte. Then it cools down and will take in all of the water like a sponge, forming gelatin
